Cooking for Two: Crockpot Chicken Parm Sloppy Joes

Once again I found myself running low on ingredients in the kitchen, which is probably a good thing, saves me money at the grocery store and I usually come up with our favorite meals this way.  I threw the ingredients in the crockpot at lunch and came home from work to a house filled with the smells of Italia!  This is now a family favorite of ours and I hope a favorite of yours too.

Crockpot Chicken Parm Sloppy Joes
Recipe makes 2 servings

  • 2 chicken breasts, can be frozen
  • 2 cups pasta sauce
  • 1/4 cup water
  • Salt, pepper, garlic powder and Italian seasoning to taste
  • 2 tbsp grated Parmesan cheese
  • 2 sub rolls
  • Shredded Mozzarella, to top sandwiches with



1. Season chicken with salt, pepper, garlic powder and Italian seasoning to taste
2. Place chicken on the bottom of the crockpot and pour the pasta sauce and water on top
3. Cook on low 4-5 hours
4. Shred the chicken and stir then cook for another 30 minutes
5. Add in the Parmesan cheese and stir
6. Place the mixture onto sub rolls and top with Mozzarella, then pop it under the broiler until the cheese is melted
