Side Dish: Roasted Asparagus

Asparagus is pretty much a staple at our house, the Mr. and I eat it at least twice a week.  When something tastes this good and is this healthy, why wouldn't you eat it all the time!?  The Mr. used to be a very picky eater and asparagus was a "freaky" food for him, but now he is the one requesting it just about everyday :)

Roasted Asparagus

  • 1 bundle of asparagus
  • Olive oil
  • Salt and pepper, to taste
  • Garlic powder, to taste (can also use freshly minced garlic)



1. Preheat oven to 425°
2. Trim off bottoms of asparagus, the rough white part
3. Place asparagus on baking sheet and drizzle with a good amount of olive oil
4. Season with salt, pepper and garlic powder, to taste
5. Mix asparagus with seasonings and olive oil well


6. Bake in preheated oven for 12 minutes

  2. you can do the same prep and then grill them for a different taste! this is how we always do our asparagus!
