Shrimp & Bacon Linguine in Creamy Tomato Sauce

HELLO, Friday!!! Do you have anything fun planned this weekend?
We're celebrating my niece's 3rd birthday at good ol' Chuck E Cheese, wish us luck! ;)

Shrimp & Bacon Linguine in Creamy Tomato Sauce
Recipe serves 6
 
Ingredients
 1 shallot, diced
2 garlic cloves, minced
5 slices of bacon, diced
1 lb. shrimp
1 jar of good tomato sauce
8oz heavy cream
1lb linguine

Directions
1| In a large pot, cook the bacon over medium high heat & set aside
2| Drain the bacon grease, leaving 3 Tbsp in the pot. Turn the heat down to medium and cook the shallots & garlic
3| Pour in the tomato sauce & cream, then simmer for 20 minutes, keep an eye on it and stir a couple times
4| While the sauce is simmering, cook the pasta & shrimp. We cooked our shrimp on the stovetop, medium high heat, 3 minutes per side.
5| Once the sauce is thickened, pour in the pasta, shrimp & bacon, mix well


Top with fresh parm & serve with a big garden salad
